Udder Taste Sensation

The folks at Glamourview Creamery, 9847 Woodsboro Pike, Walkersville, are going all out to make sure customers get the freshest dairy products possible from their herd of 180 cows—two-thirds of which are Jerseys, said to produce the creamiest milk.

Their latest innovation is retrofitting a shipping container into a processing trailer so that a bottle of milk can go from cow to home refrigerator in less than 12 hours. “I can’t imagine anything fresher,” says Craig Walton, who along with his wife, Emily, and partner Gene Iager, run the farm operation.

As more farmers are finding out, diversity is the way to go toward making a living in a profession that has so many variables, whether it’s the weather, pests or fluctuating market prices. So, rather than shipping milk to another processor, Glamourview is doing the work of turning its milk into products ranging from ice cream—both hand-dipped and soft-serve—to cheese curds.

Another facet to the operation is a food truck that just went on the road this summer. Walton is thrilled by the immediate response, with bookings for birthdays, Little League games, nursing homes, businesses that want to treat their employees and weddings, one of which customized the sundae toppings to coordinate with its color theme.

But that’s not all, folks. Visits to the farm for milk and other products will be more accommodating once a storefront is opened, hopefully in September. Walton says he plans to install a viewing wall so that people can see the cows being robotically milked. “It’s a good way to teach consumers about what we do,” he says.
